Mixed Mushroom Crostini

INGREDIENTS

  • French Baguette
  • Ricotta Cheese
  • Extra Virgin Olive Oil
  • Kosher Salt
  • Black Peppers
  • Fresh Thyme
  • Fresh Chives
  • Unsalted Butter
  • Four Star Blue Oyster Mushrooms
  • Four Star King Trumpet Mushrooms
  • Four Star Lions Mane Mushroom

DIRECTIONS

For Mushroom mix  

1. Preheat your oven to 375 degrees

2. Clean all your mushrooms and cut into semi-uniform pieces. (I like to peel the oyster and lions manes for a more natural look)

3. In a large bowl, add mushrooms, add extra virgin olive oil, season with the salt, pepper, then pick and add the fresh thyme. 

4. Lay out on sheet trays with parchment paper. Place in oven for 5-7 minutes until some color is on mushrooms. 

5. In a large saute pan, add extra virgin olive oil and let heat rise until a light smoke point can be seen. 

6. Add mushroom mix and allow to sear. 

7. Finish with butter to add fat and saute

For Crostini

1. Preheat oven for 375 degrees

2. Cut baguette on bias for nice angle cuts of crostini

3. Place on sheet tray with parchment paper, drizzle olive oil on every piece. Place in oven until golden. 

For Ricotta 

1. In a large mixing bowl, add ricotta

2. Using a whisk, whisk in 2TB of extra virgin olive oil

3. Whip until smooth consistency, let sit at room temperature. To each crostini, cover with ricotta, place mushroom mixture on top, finish with chives and black pepper.
