INGREDIENTS

  • 1 loaf ciabatta sliced
  • 1 sprig thyme
  • 1 sprig rosemary
  • 1 sprig parsley, chopped
  • 4oz butter
  • 4oz mascarpone
  • Salt & Pepper
  • 1oz balsamic vinegar
  • Four Star Blue Oyster Mushrooms
  • Four Star King Trumpet Mushrooms
  • Four Star Lions Mane Mushroom

DIRECTIONS

  • Melt half of the butter in a flat bottomed pan and add the sliced ciabatta. 
  • Toast until golden brown on both sides. 
  • Remove the bread and add the rest of the butter. 
  • Once melted add the herbs and fry them briefly. 
  • Then add the mushrooms and cook on medium heat until golden brown. 
  • Season with salt and pepper. 
  • Spread the mascarpone on the toasted bread
  • Top with the roasted mushrooms and a couple drops of the balsamic vinegar.
