INGREDIENTS

● 8oz Four Star Mushrooms Medley
● Avocado oil or vegetable oil (high smoke point oil)
● Salt
● Black pepper
● Butter (unsalted)
● Fresh thyme
● Fresh rosemary
● Crushed garlic

Directions

  • Heat pan over medium heat for 3-5 minutes
  • Cut Four Star Mushrooms into even sizes
  • Add oil to the pan
  • Turn heat to high
  • Add mushrooms
  • Listen for sizzle - let mushrooms sit until they begin to brown
  • Saute mushrooms by moving them around in the pan semi-frequently to brown all over
  • Season mushrooms with a liberal amount of salt to taste
  • Season with fresh black pepper
  • Turn heat to medium
  • Add butter
  • Add crushed garlic, fresh rosemary and thyme to finish
  • Enjoy!

Chef's Tips

  • Do not salt until the end!
  • Smaller size leads to more of the maillard reaction which means more caramelization
  • Start with a hot pan. If you start with a cold pan…
  • No matter how much oil you add, the mushrooms will stick to the bottom and burn.
  • Liquid will seep out of mushrooms before you can create a crust and mushrooms will be chewy.
  • Once mushrooms are added evenly in the pan, do not touch them - let them caramelize
  • Add more salt than you think you need - this brings out the flavor!
  • Don’t crowd pan - Use larger pan or batch cook the mushrooms.
